BACK OF HOUSE ASSISTANT MANAGER

As a Back of House Assistant Manager you are responsible for overseeing and managing all aspects of our kitchen operations including food quality, food safety, inventory management, and food cost. Your primary focus is to align with the goals of the Back of House Director(s) and lead a kitchen that produces safe and great food quickly, while maintaining a remarkably clean environment.

Responsibilities

Operations:

  • Oversee daily operations of the Back of House Department and lead the shifts with excellence during your shift.
  • Ensure team policies and procedures are being maintained by all team members during your shift.
  • Implement and maintain high standards of food saf to ensure a quick and positive dining experience.
  • Ensure the team members are serving guests with excellence and using the Winning Hearts Everyday strategy.
  • Hold the team accountable for completion of their VSBL checklists.
  • Oversee your designated area(s) of responsibility which will many change at determination of the BOH Director(s) (i.e. CEMs, VSBL, Cleanliness, RER Roadmaps, etc)

Leadership Oversight:

  • Foster a positive and collaborative work environment, promoting teamwork, and a ‘serve others mindset’
  • Ensure you are holding the team accountable for success in your area of responsibility (i.e. maintaining cleaning standards, CEM success metrics, VSBL completion rate, etc)
  • Attend monthly manager meetings to ensure alignment with BOH goals and action plans
  • Meet with BOH AM/PM Manager(s) biweekly to give/receive feedback

Financial Stewardship:

  • Analyze productivity daily and ensure calls are made (set breaks/send people home) during shifts
  • Collaborate with the AM/PM Managers to ensure CEM goals are met monthly and productivity goals are met daily
  • Ensure proper procedures are in place for maintaining our condiment gap and dessert gap goals

Training and Development:

  • Ensure team members are progressing through the RER roadmaps consistently
  • Hold the trainer team accountable for following proper procedures and training consistently, provide feedback to People department to verify trainer performance

Success Metrics

We know that the BOH Assistant Manager is successfully meeting and exceeding role expectations when the following items are met:

  • Speed of service times are below 4 minutes
  • Productivity is 90 or higher
  • eRQAs are completed twice daily
  • SAFE Daily Criticals are completed twice daily
  • Area(s) of Responsibility Success Metrics are met:
    • Cleanliness- Weekly cleanings done, Ecosure @ 1
    • CEM Scores: Order Accuracy, Fast Service, Taste, and Temperature scores meet or exceed market averages
    • AHA timers at 98%
    • VSBL completion rate 100%
    • RER Roadmaps- All team members with 6 month tenure have at least completed their intermediate checklist
